Grey-Line Panna Cotta
This light desert is a take on the flavors of a London Fog and can be made in any small vessel but a tapered, clear one works well for unmolding (optional).
In sauce pan bring to a boil on medium-low heat (stirring constantly):
2 cups heavy cream
2 cups whole milk
1/2 cup sugar
1 tablespoon honey
3 tablespoons Hugo Tea Grey-Line
Once foamy and almost to a boil, turn off heat and steep for 15 minutes.
In separate bowl, add together:
1 packet of gelatin (or 2 teaspoons)
2 teaspoons cool water
After 15 minutes, add and stir gelatin mixture to milk mixture.
Pour through strainer to remove tea, then decant into ramekins/molds with honey coating the bottom.
